
This combination of warm sunny aspect, and tough soil conditions is already producing fruit of the most intense flavour. Berries are small and yields naturally low so that we are able to avoid 'Green Harvesting' - a procedure used to reduce crops on over-vigorous vines in an attempt to improve fruit quality.
Our first harvest began at the end of September 2009 - and the organically grown fruit surpassed expectations with a perfect balance of acidity and sugar for Traditional Method Sparkling Wine production.
